Description
White Wine by Menade from Spain. Nosso, no so2, started as an experiment that has turned out to be enormously successful. It starts as 60 year-old vines planted on chalk soils covered with a layer of gravel which are harvested by hand in the middle of the night to prevent oxidation, a crucial step if you are planning to make wines without sulfur. Next the grapes are sorted, destemmed and pressed into tanks where the wine ferments entirely by indigenous yeasts, protected under a layer of CO2. Malo is not blocked and the wine aged on its lees for 6 months before bottling.
